Raising cattle is what we do. It's not a side project — it's the whole thing. We raise our animals here in Roswell, and we know every one of them by how they were raised, what they ate, and how they were handled from birth to processing.

For a long time, like most cattle farmers, we sold through feedlots and processors — never knowing who ended up with our beef or whether they appreciated what went into raising it. That bothered us.

Our Standards

No Additives, Ever

No hormones, no artificial additives, no preservatives. Our beef is exactly what it is — beef. Vacuum-sealed and frozen at the processor, nothing added.

Farm to Table Speed

Direct sales mean your beef moves from our farm to a USDA-licensed processor to your freezer — without sitting in a warehouse or being handled by middlemen along the way.

Full Traceability

USDA-Inspected Processing

Every animal is processed at a licensed, USDA-inspected facility. This isn't a backyard operation. It's done right, safely, and to legal standard.

New Mexico Raised

Our cattle graze the rangeland of southeastern New Mexico. The high desert terrain and dry air of the region contribute to the flavor and quality of the beef.

Pasture-Raised

Our cattle graze open rangeland, not confinement operations. They have space to move, room to grow, and access to natural forage.

No Unnecessary Antibiotics

We treat sick animals when needed — that's responsible husbandry. We don't use routine or preventive antibiotics as a growth strategy.

Premium & Standard Grades

Premium is our top grade — superior marbling and tenderness. Standard is raised to the same standards at about 10% less. All of our beef is ration-fed and finished.

Custom Cut Sheets

Every share order gets a cut sheet. You tell us how you want your beef — steak thickness, roast size, grind ratio. We make sure the processor follows it.

Vacuum-Sealed & Frozen

All beef is vacuum-sealed immediately after cutting and frozen at the processor. No exposure, no freezer burn risk, and maximum shelf life — up to 18 months in your freezer.

Small Operation, Personal Service

You're not a ticket number. When you have questions, Jesse answers them. We're a small farm and we like it that way.
