How It Works

Buying direct is simple. Here's what to expect from deposit to freezer.

Reserve & Deposit

Choose your share size and pay your deposit online. Your deposit secures your reservation on a specific animal or processing slot.

Choose Your Cuts

We send a cut sheet so you can specify how you want your beef processed — steak thickness, roast size, grind ratio, and more.

Pay Balance

Balance is calculated on hanging weight at the processor and is due before or at pickup. No surprises.

Pick Up Your Beef

Pickup from our ranch in Roswell, NM or the processor. Everything is vacuum-sealed, frozen, and ready for your freezer.

Processing Time

Typically 2–4 weeks from processing date to pickup. We'll keep you posted every step of the way.

All Sales Final

Sales are final once processing is scheduled. Deposits are non-refundable. Please make sure you have freezer space before reserving.

FAQ

Your deposit holds your reservation. The final price is based on the animal's hanging weight — the weight of the carcass after slaughter, before processing. We charge a per-pound rate on hanging weight; your processor also charges a cut-and-wrap fee.

We'll give you an estimated total range upfront so you know what to budget. The final invoice is settled before or at pickup.

Hanging weight is the weight of the carcass after initial processing — before the final trimming, bone removal, and wrapping that happens at the butcher. Take-home weight (also called "cut weight") is what you actually walk away with.

Typically, you take home roughly 60–65% of the hanging weight. This accounts for bone, fat trim, and moisture. It's industry-standard — not waste.

The balance is due before or at pickup, once we have the final hanging weight from the processor. We'll notify you with the exact amount as soon as it's available, typically a few days after processing.

Yes. After your deposit is received, we'll send you a cut sheet to fill out. You can specify steak thickness, roast size, ground beef blend ratios, packaging preferences, and whether you'd like organ meats or soup bones included.

The processor handles all cutting to your specifications.

All sales are final. Deposits are non-refundable. Once processing is scheduled, the reservation cannot be cancelled. This is standard practice for beef shares — the animal is processed specifically for your order.

Premium beef comes from steers — animals raised specifically for beef production. Steers typically have superior marbling, tenderness, and flavor compared to cows.

Standard beef comes from cows — the same ranch-raised quality, same no-additive standards, just at a 10% savings. A solid choice when budget is the priority.

A good rule of thumb: 1 cubic foot of freezer space per 35–40 lbs of beef. So for a quarter (75–100 lbs), plan for about 4–5 cubic feet. A half needs 8–10 cubic feet, and a whole needs 16–20 cubic feet.

A standard upright or chest freezer (7 cu ft) easily handles a quarter. A chest freezer (15–20 cu ft) handles a half or more. Don't have a chest freezer yet? Many people buy one specifically for their beef share — it pays for itself quickly.

Vacuum-sealed and frozen, beef will maintain peak quality for 12–18 months. After that it's still safe to eat, but the quality may begin to decline. Most families work through a share well before that.

At this time, shares are pickup-only from our location in Roswell, NM or the processor. We don't currently offer shipping on whole-animal shares. Individual cuts from our shop can be picked up at the ranch or delivered locally in the Roswell area.
